Dutch Matjes refers to Hollandse maatjesharing, young, mild-cured North Sea herring processed using the centuries-old Dutch gibbing method, which earned EU Guaranteed Traditional Specialty (TSG) status in 2016. Sold to the US market in gourmet and kosher formats.
